Gamopilafo (Traditional Cretan Wedding Rice)
Gamopilafo is one of the most famous traditional dishes from Crete. It is typically served at weddings and large celebrations. The secret of the dish is the rich broth from the meat, which gives the rice its creamy texture and deep flavor.

Ingredients (Serves 4)
1 kg goat or lamb (with bone)
2 cups rice (short-grain such as carolina or similar)
1.5–2 liters meat broth (from the boiled meat)
1 lemon
Salt
Black pepper
Instructions
Boil the meatPlace the goat or lamb in a large pot with water and a little salt.Let it simmer for about 1–1.5 hours, until the meat becomes tender.
Prepare the brothRemove the meat from the pot and strain the broth.This broth is the key element that gives the rice its authentic flavor.
Cook the riceBring the broth back to a boil and add the rice.Stir regularly and cook until the rice absorbs most of the liquid and becomes creamy rather than dry.
Finish the dishAdd fresh lemon juice, salt, and pepper to taste.
ServeServe the rice on a plate and place the boiled meat either on the side or on top.
